Tofu Vegan Egg

No surprise if you've been following me awhile: I love vegan versions of my pre-vegan favorites and I love using convenient appliances whenever possible.

That's how this breakfast sandwich came to be. I'm a fan of vegan egg products but I always crave something a bit more substantial. Adding tofu turned it into a heartier addition to this quick meal. In the recipe notes, you'll see links to some of the products I used.

This recipe is part of a series of AirGO recipes I'm posting this month and into January. It's a great 'extension' for stove top and oven cooking!

 

Tofu Vegan Egg

Servings 4 vegan eggs

Ingredients

  • 2 tablespoons VeganEgg + 1/2 cup cold water
  • 7 ounces firm tofu drained and crumbled
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black salt
  • 1/4 teaspoon white pepper
  • 4 vegan sausage patties optional
  • 4 biscuits optional

Instructions

  1. Combine the VeganEgg and cold water in a blender. Add the tofu, turmeric, paprika, black salt, and white pepper. Blend until combined and a little chunky.
  2. Use the Base Heat function of the AirGo and set for 23 minutes on 400°Allow it to preheat for three minutes. At 20 minutes remaining, spray the pan with vegetable oil. Pour the tofu and vegan egg mix into the AirGo. Cook for 10minutes. At 10 minutes, portion the “egg” into four pieces and flip over. If making vegan sausage, place the tofu egg pieces to one side. Place four vegan breakfast sausages on the other side. Spray the sausage and vegan egg with vegetable oil spray. Cook for 10 minutes longer. At 5 minutes remaining, flip the sausage over.

Served on homemade biscuits with mustard and vegan cheddar cheese.
