The week is flying by! Monday was a busy day – from getting ready for my Easy Vegan radio interview with Nick Cooney to then editing it (we had some tech difficulties so post-show work was pretty intense). Though I had to edit about five minutes of the interview out due to sound issues, the 22-minute show contains some gems from Nick on ag-gag laws and considerations for vegans when making philanthropic decisions. I was in Oakland this week to meet with a consulting client – a quick trip that included some delicious food! I stopped by Souley Vegan for a late dinner the night I arrived. I had the mac n’ cheese for dinner and took the tofu and grits back to my hotel to have for breakfast the next morning.
