Cleansing Miso Soup

I’m eating today! I’m proud that I completed a successful 3-day Master Cleanse fast to rest the digestive system.  Day one was great.  I began lagging a bit on day two but that could have been from running errands (including the farmers market, where we got veggies for the magical miso soup!) and shopping early in the day.  On day three I really wanted to eat. Navy Beans & Greens, A Big A** Salad and Lemonade

I have been cleansing since last Saturday and have been keeping a daily journal about it on Facebook. I’ve enjoyed some lovely meals, including a Tofu Paella and Stuffed Green Pepper and a killer vegetarian chili. Burritos & Chili (Rice Cooker Kidney Beans!)

I’ve mentioned my adoration for cooking beans in the rice cooker in a previous post (Azuki beans in the rice cooker = You. Had. Me. At. Hello).  It was time to try kidney beans. JL’s Rice Cooker Kidney Beans Makes nearly 3 cups of beans 1 cup dry kidney beans 3 cups water 1 cup of vegetable stock 1 banana pepper 1/4 of a large onion bay leaf dulse flakes 2 cloves of garlic 2 dashes of cayenne pepper 1 T earth balance Combine all ingredients and place in the rice cooker. I began cleansing on Saturday (I’m journaling about it on my Facebook page) and I am thrilled that Jill, my nutrition counselor (find her at Hera Wellness) has given me permission to share some of the recipes from the 2-week cleanse meal plan on my blog. Tomato-Less TVP Chili

JL’s Tomato-Less TVP Chili adapted from TomatoLess Chili Makes 4 cups of chili 1 c TVP 1 c vegetable stock 1T olive oil 1/2 large red onion, diced 2 cloves garlic 1 banana pepper 2 T chili powder 2 T brown rice flour 1 t salt 1 t cumin 3 cups warm water Paprika for color Add one cup of vegetable stock to one cup of dry TVP and let absorb for 20 minutes. As I waited for my train to Manhattan Tuesday morning I noticed that the leaves are turning quickly, and falling even faster. If you’re following Project Food Blog 2010 on Foodbuzz then you know that on Sunday Emily of The Front Burner made an amazing Harvest Root Vegetable Pie.  I have no illusions.  I’m not a baker and if it took her three tries to make that gorgeous crust; there is not enough flour in the tri-state area for me! Anniversary weekend on Lake Waramaug

We love Lake Waramaug.  We visited this summer and do so a couple of times a year.  It’s so close to home, yet feels like it’s a world away. We headed northeast on Saturday. We stopped in Bedford, at The Meeting House, for lunch. To start, adult beverages. Savory Seed Crackers

JL’s Savory Seed Crackers 2/3 cup flax seed (I mixed brown and golden) 2/3 cup sunflower seeds 1/3 cup chia seeds 1/3 cup sesame seeds 1 clove garlic 1/2 cup water splash of Bragg Liquid Aminos splash of vegan worchestershire sauce dash of cayenne pepper dash of dried oregano  Pulse the seeds and slowly add water, garlic, Bragg Liquid Aminos and the vegan worchestershire sauce (because “normal” worchestershire sauce contains anchovies.)  Pulse until desired consistency (not too dry, not too liquid, I like to see the seeds.)  Add cayenne pepper and oregeno and give it one last pulse. Spread on one […]

How was your weekend?  Mine took an unexpected turn. I had planned to run a half-marathon on Saturday but made the decision not to.  I ended my 2006 season on crutches after my first leg in the Reach the Beach Relay in New Hampshire (I went back in 2007 and redeemed myself!)  My 2007 season ended with a bike accident which required stitches in my face and banged up knees. I ended 2008 intact but in 2009, while training for my first Olympic Distance Triathlon, I hurt my knee in July and, against better judgment, still did the August triathlon. […]

Tofu Pumpkin Soup

I made this in a measuring cup. JL’s Easy Tofu Pumpkin Soup Serves 1 1/4 cup of canned pumpkin 1/3 block of tofu, pressed and diced 1/4 red pepper, diced Splash of Bragg’s Liquid Aminos dash of hot curry 2 cups raw kale 2T cooked quinoa 1 cup veggie stock Steam the kale (I used a Pampered Chef steamer: a splash of water, 1 minute in the microwave).  Add all ingredients into a 2 cup measuring cup. Cover with a piece of wax paper.  Microwave for 3 minutes. Lunch is served!
