In the first girlfriend weekend recap installment, A vegan in San Diego. Part 1: Dining out it’s clear that we enjoyed some great meals out and about.  We also enjoyed some great meals in.  But before I get to that, it’s important you know that we actually did get some exercise, too! A vegan in San Diego. Part 1: Dining out

What a wonderful gal-pal weekend in San Diego. My friend Susan flew in from Florida. I flew in from New York. And Lisa opened her gorgeous home to us. In this post, I will highlight our dining out adventures. Friday, dinner at Kitchen 1540 in Del Mar I phoned Kitchen 1540 at L’Auberge to verify that they would accommodate a vegan. TVP + Miso Mayo Collard Green Wrap

I love wrapping up food in collard greens! TVP + Miso Mayo Collard Green Wrap 1 cup of TVP (to 1 cup veggie stock, let soak for 20 minutes) 1 t tomato paste 2 t apple cider vinegar Mix and spoon into a raw collard green, add a dollop of Miso Mayo Wrap and enjoy! Do you use collard greens as wraps?

Vegan meals, without a plan

This is my first weekend home in three weeks.  As I’ve mentioned in a previous post, I’m a bit obsessive about planning and prepping meals over the weekend so that I have quick and easy options for lunch and dinner throughout the week.  All of this travel has thrown me off a bit. Miso-Date Tofu & Spinach-Coconut Salad

I love sweet and savory (See JL’s “Date” with a Very Veggie Lentil Salad).  I don’t have a crazy sweet tooth (let’s just say my desire for sweets is mostly hormonal) but I do love sweetness with salt.  With that, I give you Wednesday dinner and Thursday lunch. Vegan running

I’ve mentioned this in my vegan transition story, but, to set the stage…. I started running in 2004.  Begrudgingly.  In the summer of 2003 I went on “The South Beach Diet” because it was vegetarian-friendly (unlike Atkins). Mind you, I was eating fish at the time (I was that vegetarian) but mostly only at restaurants.  I lost nearly 20 pounds with no exercise. Quick meals in a cottage I’ve just returned from a lovely, long weekend in Vermont.  The gorgeous weather provided a perfect setting for some training runs and a nice bike ride. We were fortunate to be invited up by a friend, who set us up in her guest cottage.  I love travel that allows me to cook a meal or two. What Vegans Eat (Actually, what this vegan eats) I’ve been a little obsessed with my summer salads this year; it’s my first summer eating vegan, after all.  I pack my lunch (and snacks!) every day for work and I like something filling, yet light. I started eating vegan in January.  I read about several great vegan restaurants in NYC and could not wait to try one.  Cut to April.  I ran my first half-marathon of the season on a horrible day.  Cold, pouring rain.  Miserable.  Running Central Park twice is challenging on it’s own.
