Summer Friday!

So, these Summer Fridays of which I speak?  For six weeks in the summer we work 8:00 – 5:30 Monday – Thursday with 30 minute lunch breaks (normally, it’s 9 – 5 with a one hour lunch break).  So far, I’ve only had one Friday at home, as I have been traveling. But yesterday, I had a regular ole Friday off from work. Or was it? Crazy mornings, long days, tired at dinner. What to eat?

We enjoy “summer Fridays” at work from July to mid-August. Sounds awesome, right? It is. But the downside is super-long days Monday – Thursday.  I don’t always get to take the time and care into food prep that I would like to in the morning (I make breakfast every morning, plus pack snacks and lunch for the day). Rushed, as usual, this is what I came up with Thursday. Everybody’s Cafe, take two

Last Friday I had lunch at Everybody’s Cafe in Stroudsburg, PA.  I wasn’t wowed by the lentil burger, but loved the ambiance of the place and the creamy, vegan chickpea dressing on my starter salad.  So we decided to stop in for brunch Sunday, on our drive home. I spied a vegetarian jambalaya on Friday and I was obsessed. Matter over mind

As you may have read on Stop Chasing Skinny earlier this month, I skipped the triathlon for which I was training.  I wasn’t prepared.  Once I made the sound decision to skip the race, I ended up working out every day that week. And then I didn’t work out at all. I wonder if after years of training for something, anything, I just didn’t know how to get moving, simply for  me? A few days ago, the fourth day of 90 – 100 degree temperatures and the second day of the northeast “heat wave,” I went for a run.

Vegan eats at the Double Wide Grill in Pittsburgh, PA

I’m on the road again! This weekend to eastern Pennsylvania to officiate a wedding in the Poconos.  While I’m away, I thought I would share a meal I enjoyed last weekend when visiting western Pennsylvania. We drove into Pittsburgh for the day.  After doing a little shopping we found our way to the Double Wide Grill, a fabulous, old service station that offers good ole food for the omnivore, the vegetarian and the vegan.

Quinoa-Amaranth & Lentil Salad

I recently tweeted that I had an experiment in the rice cooker that would either be a fail or be genius. I’m going with genius. After a ten-day vacation I found myself–on a Monday morning just a few hours before work–in desperate need of a grain dish.  I spied a bag of amaranth*, unopened, but wasn’t quite sure if that was the day to try to figure out how to cook it.  I also saw some red quinoa in a jar next to it. I gush.  It’s true. If I love something I can’t help myself. This book was in my mailbox on Thursday. I finished it by noon on Friday. It’s that good. Jack Norris, RD and Ginny Messina, MPH, RD have teamed up for what I now consider the vegan resource on my bookshelf, Vegan for Life:  Everything you need to know to be healthy and fit on a plant-based diet.  (You may recall that Ginny, The Vegan RD, wrote a post on vegan nutrition for the Vegan 101 series on this blog.) Intuitive cooking. I started thinking about this concept the weekend I went to Philadelphia to attend Christina Pirello’s 3-Day Intensive Study Program. I received an information packet a few weeks in advance of the class and it stated we would receive no recipes during the class. What?! No recipes? My Macro Veggie & Lentil Salad

I’ve been playing around with macro meals, mostly breakfast, since taking the 3-day cooking intensive with Christina Pirello. I’m also trying to find a way to enjoy my beans and greens in a more “refreshing way” in the summer. Enter my Macro Veggie & Lentil salad. What makes it “macro”?
