Summer Friday!

So, these Summer Fridays of which I speak?  For six weeks in the summer we work 8:00 – 5:30 Monday – Thursday with 30 minute lunch breaks (normally, it’s 9 – 5 with a one hour lunch break).  So far, I’ve only had one Friday at home, as I have been traveling. But yesterday, I had a regular ole Friday off from work. Or was it?

First, my girlfriend Denise popped over at 9:00 for a very serious conversation about blogging.  I decided to whip up a super-fast, super-yummy, super-nutritious morning meal.  A variation of my Ice Cream for Breakfast.

I used blueberries instead of mango and, to make a chocolate “ice cream,” I added dark chocolate hemp protein powder.  I doubled the recipe so it was a little dry. Nothing a little soy milk couldn’t fix up!

So good! (Denise thought so, too!)

I’d like to say the rest of my day was as fun as my morning with De.  Let’s just say I’m learning what it means to be 45 years old, going on 46. First, off to the allergist.  Then off to the MRI clinic for an ultrasound on my thyroid.  There was a third medical appointment scheduled but, fortunately, I had an hour to kill.  I was a quarter-mile from my favorite health food store and I knew I could get a quick, fabulous, vegan lunch.

I picked up a cucumber, tofu and bean salad from the deli

and, while looking for some Mary’s Gone Crackers, I stumbled across these.

Dude, do NOT put macaroons next to the crackers.  I’m weak!  There were four flavors but I went with Lemon-Ginger and Chai Spice–both were fantastic but Chai wins.  In my defense, I had only one (chai) macaroon before going to my third, and final, appointment of the day.

I deserved a cookie because my vagina was about to be invaded by my friendly OB-GYN.

After four hours out and about, being poked and prodded, I found myself at home. With a huge glass of wine in hand.

Do I know how to have  a Summer Friday, or what?

  1. Way to turn a yucky day into a good day!  Wine and cookies?  Absolutely!

  2. Gawd…..MRI?  Hope you don’t have a lump (even benign!) on your thyroid!  My friend was going through a bunch of thyroid types of things a few years back and the docs were resistant to even order certain tests because she was not overweight.  So you had a NOT fun day!!  But the good thing about multiple appts. is that they are all over at once!

    1. That’s a funny thing about the doctor not ordering anything because she wasn’t overweight! I’m not either. I have hypothyroidism and, because my levels increased recently (after several years on Synthroid) she thought it best to see if my thyroid is enlarging. She didn’t think so but wanted to be sure.

Agreed, while it wasn’t fun, it was necessary and (mostly) all done — have to go back to the allergist for a skin test in a couple of weeks and then, there’s always the fun September mammogram 😉

  3. What a wonderful breakfast! And I love the bowls, have the same ones. 🙂 And yes, you deserved the macaroon! Not a fun day of appointments, but great to get them all out the way.

  4. I freakin’ loved it!!! I’m actually printing the recipe right now….thanks my friend…for everything.

  6. You make even the most tortuous activities sound fun. Enjoy the rest of your summer Fridays – hopefully the future ones will be a little more fun. 😉
