Vegan Air Frying

Have you heard about the low- or no-oil way to fry vegan foods? Air frying is a thing! I will teach you the fundamentals and then you will do the cooking. Menu items include breakfast, vegetables, one-basket meals, dessert, tofu, perfect french fries, and more.

Seitan and Soy Curls

In this hands-on class, you make the homemade seitan (a gluten-version of vegan meat)! We will make it three ways: baked, steamed, and in the pressure cooker. While the seitan is cooking up we’ll work with soy curls, making a chicken-less salad, tacos, and Asian-style soy curls. When the seitan is ready, we’ll prepare it three different ways.

Vegan Pressure Cooking 

Learn how to create quick full-flavored, wholesome dishes that don’t keep you chained to the kitchen but do keep you and your family happy! Great for anyone who has a traditional stove top pressure cooker, an electric pressure cooker, or a multicooker such as the Instant Pot and Fagor LUX. (You can even bring your own device!)

Fundamentals of Vegan Cooking

This Colorado Springs Vegan Cooking Academy course studies techniques for healthy and delicious plant-based cooking. Students will understand the pillars of vegan diets – health, environment, and ethics. Culinary focus is on ingredient substitution, healthy food preparation techniques, and making diverse vegetable, fruit, legume, and grain dishes. Students will understand how to incorporate plant-based cooking in their own home or in a restaurant or food service environment.

Designed for home cooks, paraprofessional chefs and professional culinary artists, this three-session, hands-on class provides the building blocks for vegan cooking in your own kitchen or restaurant. Building on the basic vegan food groups – vegetables, fruit, beans/legumes, grains, and nuts and seeds – you will learn essential techniques to make delicious and satisfying plant-based meals.

6-hours (three sessions) + recipes + Certificate of Completion: $155

Private Vegan Pressure Cooking (or Instant Pot or Multicooker) Lesson

I join you in your kitchen via Skype (or Zoom, Facebook Video Chat or Google Hangouts) to teach you the basics of vegan pressure cooking. MEET THE COLORADO SPRINGS VEGAN COOKING ACADEMY DIRECTOR AND FOUNDER

JL Fields is the founder and culinary director of the Colorado Springs Vegan Cooking Academy. She is a Master Vegan Lifestyle Coach & Educator, Food for Life instructor, chef instructor in the culinary program at the University of New Mexico-Taos, personal chef, career coach, and a corporate consultant offering wellness training, brand representation, and strategic planning services.

JL is the author of The Vegan Air Fryer: The Healthier Way to Enjoy Deep-Fried Flavors (Vegan Heritage Press, June 2017) and Vegan Pressure Cooking: Delicious Beans, Grains, and One-Pot Meals in Minutes (Fair Winds Press, January 2015) and co-author of The Main Street Vegan Academy Cookbook: Over 100 Plant-Sourced Recipes Plus Practical Tips for the Healthiest, Most Compassionate You (Ben Bella, December 2017) and Vegan for Her: The Woman’s Guide to Being Healthy and Fit on a Plant-Based Diet (Da Capo Lifelong Books, July 2013)She is the co-creator of The Real World Vegan Meal Plan, producer and host of the radio program Easy Vegan, and writes the monthly vegan dining review for the Colorado Springs Gazette.

A devoted culinary student, JL has studied at the Natural Gourmet Institute and Organic Avenue, and completed the Intensive Study Program at The Christina Pirello School of Natural Cooking and Integrative Health Studies. She is certified by – and on the faculty of – the Main Street Vegan Academy, is certified as a Food for Life Instructor by Physicians Committee for Responsible Medicine and holds a Master of Science degree.
JL provides in-person vegan cooking services, lifestyle coaching and classes in Colorado Springs and the surrounding area as well as Skype and/or phone coaching throughout the U.S. and internationally. She provides career consulting for health and wellness coaches, chefs, and other professionals who want to develop their coaching practice.
