Saturday, March 4 | 2:30 – 4 p.m. | The Burrowing Owl, Colorado Springs

Wheat-meat*. It’s a thing. And we are going to teach YOU how to make seitan at home!

In this vegan cooking demonstration class, culinary instructor JL Fields and Burrowing Owl chef Cody Rilo will teach you three different ways to make homemade seitan: in the oven, in a pressure cooker/Instant Pot, and in an air fryer. And you will learn three recipes to use that fresh, homemade seitan: ground seitan Bolognese, Swiss Steak, and Buffalo wings.

Class fee: $25

You will receive:

  • 90 minutes of instruction
  • Samples of three recipes cooked during the class
  • Six recipes

Fundamentals of Vegan Cooking I

Tuesdays, March 14, 21, and 28 | 6 – 8 p.m. | Downtown Colorado Springs

This course studies techniques for healthy and delicious plant-based cooking. Students will understand the pillars of vegan diets – health, environment, and ethics. Culinary focus is on ingredient substitution, healthy food preparation techniques, and making diverse vegetable, fruit, legume, and grain dishes. Students will understand how to incorporate plant-based cooking in their own home or in a restaurant or food service environment.

Designed for home cooks, paraprofessional chefs and professional culinary artists, this three-session, hands-on class provides the building blocks for vegan cooking in your own kitchen or restaurant. Building on the basic vegan food groups – vegetables, fruit, beans/legumes, grains, and nuts and seeds – you will learn essential techniques to make delicious and satisfying plant-based meals.

Course fee: $155

Details:

  • Class size is limited to 12 (minimum enrollment of 9 required for the class to run)
  • Class meets for three Tuesdays, 6 to 8 p.m., March 14, 21, 28.
  • Location: Downtown Colorado Springs (location provided upon registration)

Refund policy:

  • Full refund for cancellations five days prior to first session (must cancel by March 8).
  • 75% refund for cancellations 72 hours before session (must cancel by March 10).
  • Full refund if the class is canceled due to insufficient enrollment.

Wednesday, April 12 | 6 – 8 p.m. | Downtown Colorado Springs

This time YOU are the cook!

You own a pressure cooker. You’ve attended cooking demonstration classes and understand the basics. Now it’s time for you to cook. This hands-on class allows students the opportunity to use stove top and electric pressure cookers (and multicookers, like the Instant Pot and Fagor LUX) to learn how to create quick full-flavored, wholesome dishes that don’t keep you chained to the kitchen but do keep you and your family happy! Great for anyone who has a traditional stove top pressure cooker, an electric pressure cooker, or a multicooker such as the Instant Pot and Fagor LUX. (You can even bring your own device!)

Course fee: $45

Mastering Tofu and Tempeh

Monday, May 8 | 6 – 8 p.m. | Downtown Colorado Springs

Tofu and Tempeh – made with protein-packed soy and are staples for many who follow a plant-based diet – can be a bit challenging to work with if they are new to you. In this two-hour hands-on culinary class – Terrific Tofu & Tempeh – students will learn the importance of legumes in a vegan diet and create tofu and tempeh recipes ideal for breakfast, lunch, dinner and even dessert!
