Holiday vegan travel

I’m writing from the Colorado Springs airport! Dave and I are on our way to the Midwest to visit my family for the holiday. It’s been a few years since we’ve spent Christmas in Illinois and we’re looking forward to it!

We did some advance planning. I checked a big suitcase because I have an insulated bag filled with goodies for vegan cooking, including: dried cranberries and cherries + arborio rice for rice pudding (a holiday version of the Fruit and Nut Pudding in my book Vegan Pressure Cooking), 3/4 cup nutritional yeast (because, nooch!), a bubble-wrapped jar of smoked cheesy sauce (from The Honest Stand) destined for a vegan cheeseball, two bags of Rancho Gordo beans (which we’ll soak tonight) for Christmas Eve chili,  and vegan caramels (because, candy). We’ll swing by the Hy-Vee near the airport tonight and pick up the fixings for mashed potatoes, gravy, broccoli casserole, and scalloped corn for Christmas dinner (my sister picked up the lone Tofurky roast at the Hy-Vee in Burlington, IA last week.) I will be making most everything in two pressure cookers (thanks to my niece and sister!).

Oh, I’m also shooting some quickie videos on this trip. I’m part of a Holiday Vegan Travel Video Collaboration – bloggers and vloggers and capturing how easy it is to travel as a vegan during the holidays. I’m getting some good stuff at the airport and I’ll also shoot some videos of my vegan holiday cooking in my non-vegan family’s home.  If all goes well, I’ll be sharing those videos on my JLgoesVegan YouTube channel.
