Hi there. Do you forgive me for not posting my weekly Vegan News You Can Use Sunday? We flew home from Illinois to Colorado Saturday…but the first delayed flight caused us to miss our second, connecting, flight to Colorado Springs. That meant spending the night at an airport hotel. Sunday morning I was focused on getting home to CK and Ernie. It took CK less than five minutes to climb on me.

And later that night Ernie forgave me for leaving.

Little did they know – nor did Dave and I, for that matter – that a few hours later a friend would send me a message on Facebook. She found a cat in the frigid cold over the weekend – not listed as missing or lost and no chip – but she couldn’t keep him because of her dogs.

So we adopted Oliver yesterday.

He’s beautiful, sometimes sweet, and extremely ornery. I’m in love. (And I think I’m one cat closer to becoming a card-carrying Crazy Cat Lady! A girl can dream!)

Before we knew we would be getting Oliver, I spent under one hour in my kitchen getting meals ready for the week. I chatted about what I was up to on Periscope:

I made Herbs de Provence lentils (a riff on my Italian Lentils recipe in Vegan Pressure Cooking; 10 minutes at high pressure), mixed berry and chia oats (6 minutes at high pressure), and edamame sushi rice (6 minutes at high pressure).

Pressure Cooker Edamame Sushi Rice

Ingredients (Serves 6 – 8)

  • 1 and 1/2 cup sushi rice
  • 2 and 1/2 cups water
  • 1 cup frozen edamame
  • Dulse flakes (optional)
  • Mirin (optional)
  • Rice vinegar

Instructions

Combine rice, water and edamame in the pressure cooker. Cover and bring to pressure. Cook on high pressure for six minutes. Use a quick release but keep the lid locked in place for five minutes. Fluff with a fork while adding a dash of dulse flakes and a splash or two of mirin (rice wine) and rice vinegar.

I made lunch right away.

Vegan sushi

Nothing like vegan sushi!

On Monday, in the midst of getting Oliver (and then dealing with a house of three cats not at all thrilled with one another), I was able to make quick, easy, wholesome meals!  For breakfast, I simply heated up the oats with splash of almond milk and served with chopped pecans, cinnamon and maple syrup.

I had sushi (again!) for lunch, but I also decided to make a quick miso soup.

One-Minute Miso Soup

Ingredients (Serves 2)

  • 2 cups water
  • 1 small onion, cut into half-moon slices
  • 4 cups loosely packed baby spinach
  • 1 – 2 tablespoons yellow or white miso
  • Splash of Ume Plum Vinegar (optional)
  • Splash of soy sauce (optional)

Instructions

Combine water, onion and spinach in the pressure cooker. Cover and bring to pressure. Cook at high pressure for one minute. Use a quick release.

Spoon one cup of broth into a large measuring cup. Whisk miso in the broth until blended. Pour back into the pressure cooker. Stir and serve with optional vinegar and soy sauce.

This soup is so easy and good!

As for the vegan sushi: I rolled the edamame sushi rice – with romaine lettuce, carrot sticks, yellow pepper slices, and fresh basil – in a nori sheet. Mmm Mmm.

When Dave got home from work, he prepared two potatoes, Hasselback-style, to go in the oven. Meanwhile, I sautéed diced yellow pepper and onion in a little olive oil in a saucepan. I added a cup of cooked lentils and simmered it in tomato sauce (I whisked hot water with tomato paste and vegetable bouillon granules) while the potatoes were baking. I stirred baby spinach into the lentils – just long enough to wilt – before spooning over the potato.

No words. Okay one word: YES!

This is why I cook in bulk over the weekend (and why I’m crazy for vegan pressure cooking!).

  2. I wish I’d had a friend like you 6 and 8 years ago who would so readily take a cat! I wouldn’t have 3 now and didn’t want one much less 3 but of course I’m stuck with them now. :-). At least I’ve learned there is sooooo much more to cats than I’d previously thought, and they have such different personalities! I follow the blog of someone who loves cats and she said one of hers gazes into the eyes of her spouse and thought that was fairly rare so I sent her a pic of my Guinness. Do any of yours gaze into your or Dave’s eyes?
