What’s for lunch? An easy tofu sandwich!

Early this morning I opened up the refrigerator and had no idea what to pack for lunch.  I spied one-quarter block of tofu.  Idea!

I cut four thin slices of tofu and laid them out flat on a salad plate.  I squirted a little Bragg Liquid Aminos over the tofu and drizzled a little agave, sprinkled a bit of nutritional yeast and finished it off with fresh ground pepper.  I cooked the tofu in the microwave for two minutes and chopped up some lettuce, sliced a tomato and cut off two nice pieces of  bread from my Whole Wheat-Barley loaf.

What?  I forgot to tell you that I made another loaf of bread?

JL’s Whole Wheat-Barley Bread
Makes one small loaf

Ingredients

  • 1 cup water
  • 1 T Earth Balance (softened)
  • 1 cup stone ground whole wheat flour
  • 1 cup barley flour
  • 1/3 cup vital wheat gluten
  • 2 T Florida Crystals natural sugar
  • 1 t salt
  • 1 1/2 teaspoons regular active dry yeast

Instructions

  • Spray the bread maker pan with olive oil spray.
  • Add the ingredients to the bread maker in the order suggested by the manufacturer (usually wet, dry, then yeast)
  • Make a little hole in the dry ingredients and pour the yeast into the hole.
  • Set the machine for a small, wheat loaf.

So, back to that tofu sandwich.

  2. Well look at the ‘lil baker! You keep using all these appliances (e.g., bread maker, rice cooker, dehydrator) that my Christmas list for “Santa” is quickly lengthening!

  3. Nom nom, indeed! I eat that same sandwich myself, except I usually grill the tofu in the skillet first. Your breads keep looking better and better.

    1. Grilled or fried would have been a preference — but I had no time so the microwave was an experiment — that worked! Good to know, in a pinch.

  4. Oh yeah, that looks so simple and delicious, the best kind of lunch! My go-to quick and easy lunch is hummus in a sprouted grain tortilla with tempeh, sliced bell peppers, lettuce and a smear of Veganaise. Yum! 🙂

  5. Go to lunch! These days, it’s raw crackers with hefty portion of hummus and / or raw nut pate, small salad + dressing, apple and trail mix for a “soon after lunch” snack. I also love packing up soup leftovers and I love wraps.

    1. Oh, Gena, if I could just live with you for a week — I would learn to be more creative with raw foods and eat more of them. I would love to enjoy your crackers and humus or nut pate every day!
