Quickie Vegan Nog Porridge

Some might be embarrassed to post a recipe this easy on their food blog.

I’m not that person.

For me, the name of the game is vegan made easy (and tasty). So Delicious sent me a bunch of their new creamers and a healthy supply of holiday beverages.

And I immediately grabbed the coconut milk nog and made porridge.

Quickie Vegan Nog Porridge

Ingredients 

  • 3/4 cup rolled oats (not instant)
  • 1/4 cup amaranth
  • The entire carton of vegan “egg” nog
  • Ground cinnamon

Instructions

Combine the first three ingredients in the pressure cooker. Cook on high pressure for 6 minutes. Allow for a natural release.

Serve with a pinch of ground cinnamon.

Yield: 4 to 6 servings

Embarrassingly easy … but I’m not at all embarrassed. Enjoy!
