Cucumber and Apple Sandwich

I had an idea.

I toasted two pieces of Rudi’s Organic Bakery Rocky Mountain Sourdough Bread and thinly sliced one-quarter of a cucumber and part of a honey crisp apple.  I spread some vegan mayonnaise on each slice of toast, layered the vegetable and fruit, added a dash of iodized sea salt and some fresh ground pepper.

Then I ate it.

  1. So simple, but it looks amazing. I’ve never actually thought to combine cucumbers with apples. How sweet would you say this sandwich is? I’m not really one for mixing my sweets and salts but this look too tasty not to try!

    1. It really wasn’t a sweet sandwich.  Honey Crisp apples are a favorite because to me they are a great blend of a tart and sweet apple.  Try it! 

  2. What an interesting combo! It sounds so refreshing. 
    My mother used to put chopped apple in my tuna fish when I was a kid because I liked the sweet flavor and it made me eat the tuna. Thankfully I am an adult now and don’t have to at tuna anymore 😉

  3. This sounds amazing. Except for the mayo. But, you know me. 😉 Apples+cucumbers are so so good together. Simple food, lady 🙂 

  4. OK JL, this is a combo I never would have thought of. I think next time you should throw in a few dried cranberries, just for fun.

  5. This sounds pretty good, actually. I love random food combinations that work well. There is a “recipe” circulating for a cucumber and lemon slice sandwich!
