A brisk run followed by a warm breakfast (Creamy Oats and Mango)

On a crisp fall day, after a fairly brisk run

I forgot how much I enjoy cold-weather running! Getting out the door is the hard part...once out there, it's awesome!

nothing says “good morning!” like a piping hot bowl of creamy oats.

JL’s Creamy Oats and Mango

Ingredients

  • 2 cups rolled oats
  • 2 cups filtered water
  • 2 cups almond milk
  • Frozen mango (use as much as  you like)
  • Slivered almonds
  • Agave or maple syrup, to taste

Instructions

  • Add first four ingredients to the rice cooker and cook on the porridge setting.
  • When the cycle is complete stir in almond slivers and let the oats sit for 5 -10 more minutes on the warm setting.
  • Serve with agave syrup, to taste.

  1. Mango in oatmeal!  Why haven’t I tried that yet?  I know there are some frozen mango chunks in my freezer so I think I will make it after my morning run.  Thanks for the idea. 
    p.s.  I won’t be dressed like you for my run this morning — it’s warm again here in Austin. 🙁
