Warm and easy vegan meals

Um…

Is it too early in the season to whine about the weather? Yeah. Let’s just focus on how we’re warming up.

So does food.

My new go-to breakfast is TVP Oatmeal. I’ve been adding cinnamon and nutmeg to my jam jar of oats and TVP and this week have enjoyed stirring a nut or seed butter in before serving.

In my warm, toasty office I love nibbling on raw veggies and salads but when I get home from work, after scraping the car,

brrr

it’s all about comfort food!

The other night Dave baked sweet potato fries (from Costco). While they were in the oven he sautéed Sweet Earth seitan slices, chopped, in a skillet with onion and garlic. He added beef-style vegan broth and a bit of potato flour to thicken it all up for a gravy. Mmm Mmm.

The next night he made Hasselback potatoes, ala the Vegan Mos. While the potatoes were baking, I grabbed a can of diced tomatoes, white kidney beans (rinsed and drained), a can of artichoke hearts, about 1/2 cup freeze-dried corn, a couple of tablespoons of capers, and fresh basil. I combine everything in a saucepan and simmered until the potatoes were done. Mmm Mmm.

It’s time to share some book tour news!

Vegan Pressure Cooking by JL Fields

The Vegan Pressure Cooking tour is coming together nicely! My husband is now part of the JL goes Vegan | Go Vegan with JL team.

He’s putting together a fantastic tour schedule (and we have a new service launching in 2015 that I think many of you are going to love!).

My book tour is going to launch January 10 at the Arizona Vegetarian Food Festival (the book will be released January 1; you can pre-order it on Amazon now). I’ll also be doing a private cooking class for a group of ten in a friend’s home. Vegan pressure cooking + vegan wine = I love book tours!

We’re working on our February stops, including Southern Florida, Montana and Spokane. Cincinnati is at the end of February

Vegan Pressure Cooking-Cinci

and Columbus is March 1: an event including a full meal at the conclusion of the demo!

Vegan Pressure Cooking-Columbus

Other stops include Oregon, California, New York, Maryland, Minnesota, Texas, and more! Stay in touch with the tour at veganpressurecooking.com. (You can also fill out an inquiry there if you’d like me to come to your community!)

Finally, yesterday my friend and fellow vegan lifestyle coach and educator Rene’ Steelman had me as a guest on her Get Waisted radio show. We had a lot of fun talking about vegan pressure cooking, how simple eating vegan is, and our individual approaches to healthy weight and a healthy you. Take a listen HERE.
