Branching out in the vegan pressure cooker

This week I spent much more time writing (formatting, truthfully) the cookbook than actually cooking.

I will, however, tease you with a couple of fun things I cooked up in six minutes or less. This veggie dish, tossed in a spicy sauce post-cooking, is delicious and I’m really rethinking how I approach cooking veggies in the pressure cooker.

I made this bean-based dip and refrigerated it for a few hours and then served it with quinoa flatbread crackers when a friend stopped by for a visit.

My friend – who leans toward vegetarian – and my omnivore husband loved this vegan pressure cooker bean dip as much as I did!

I’m really having fun playing and branching out from the traditional beans and grains dishes I tend to make in the pressure cooker – because I know you want a lot more of that in the cookbook! I will deliver!
