The jalapeno plant in our garden is filled with peppers! Since I’m on a bread making kick my husband thought it was the perfect opportunity to nudge me to bake a loaf of bread with a little spice. You don’t have to twist my arm!
JL’s Jalapeno Corn-ish Bread
PRINT RECIPE
Ingredients
- 1 cup filtered water
- 2/3 cup frozen corn, thawed
- 1 jalapeno, diced
- 2 T chopped orange/red peppers
- 1 and 1/2 cup Better for Bread flour
- 1 and 1/2 cup Barley/Stone Ground Whole Wheat flour mix (no good reason, I just had the mix in a jar)
- 1/4 cup vital wheat gluten
- 1/3 cup corn meal
- 2 tablespoon sugar (use a vegan sugar!)
- 1 and 1/2 teaspoon active dry yeast
Instructions
- Spray the bread maker pan with olive oil
- Place all the ingredients in the bread machine in the order listed
- Choose the white/regular cycle, large loaf
We were both going nuts, smelling that delicious bread and counting the minutes until we could take a bite!
Honestly, a slab of vegan butter on a warm piece of this bread was all we needed.
However, Friday I spied the last piece. I wrapped it up and took it to work. We have a toaster oven in the office so I tossed it in and then spread guacamole and humus over the crispy slice
and enjoyed a perfectly spicy lunch!

This looks delicious – I don’t have a bread machine, but I bet I could do this in a loaf pan in the oven. I have lots of jalapenos from the garden to us, as well!

I have yet to eat lunch and this is making me drool! Where do you get your info on which sugars are vegan? Are any white sugars vegan?
