VeganMoFo 3: Monday = Breakfast (Chik’n Noodle Miso Soup)

What? Soup for breakfast?  All it took was one spectacular 3-day Cooking Intensive with Christina Pirello to change my approach to breakfast.

This morning I give you a variation on miso soup.

JL’s Chik’n Noodle Miso Soup

Ingredients

  • Filtered water
  • Chik-Style Seasoning
  • Red onion, diced
  • Carrot, diced
  • Dried mushrooms, soaked and drained
  • Wakame, soaked and drained
  • Half a bag of Shirataki Noodles, rinsed well and drained
  • Kale (handful, washed and torn into bite-size pieces)
  • Yellow Miso
  • Tamari sauce (to taste)

Instructions

  • What, no measurement? Yep, When I took Christina Pirello’s 3-day Cooking Intensive I learned to cooked intuitively and you can, too! So, add as much water and other ingredients as you like and start the soup process.
  • Add the first seven ingredients and bring to a boil.
  • Reduce to simmer, add the kale and cover for 5 – 10 minutes.
  • Uncover, bring back to a boil and and transfer one cup of the broth to a measuring cup. Reduce heat to simmer.
  • Add miso to the measuring cup and whisk with a fork until the miso is dissolved.
  • Add miso mix back to the pot of soup and simmer for two minutes.
  • Breakfast is served. (Add Tamari to taste.)

  1. I had the arabian lentil soup from Appetite for Reduction yesterday for breakfast! 

    I have a cold right now and this looks extra awesome.

  2. Breakfast is pretty much the only time I really love eating leftovers, so if I have leftover soup, yes!  I eat it for breakfast!

  3. This soup looks so good I’m going to give Shirataki noodles a 2nd try (1st time the smell right out of the package was pretty offensive to me).  Where do you purchase Chik Seasoning?  Sounds like a good item to have in my pantry.

  4. That sounds delicious. I’ve never managed to find those Tofu Shirataki noodles here so I’ll have to give there recipe a try with brown rice noodles.

  5. Chick-Style Seasoning?! That sounds so fabulous, I’m very jealous of those of you that like in countries that seem to be paved with meat free gold! I do totally crave a noodle soup now though.
