Greetings from hot, hot, hot Las Vegas! Dave and I have returned to the scene of the crime.

This time I’m back as a Reverend, to officiate my hairstylist’s wedding!
Dave and I feel pretty fortunate that our new lifestyle allows us to work from anywhere. We were up early and working for clients and athletes all morning long – from the comfort of an awesome bed, drinking great coffee and basking in the air conditioning because baby, it looks hot outside!
This is my first time being vegan in Vegas. It’s pretty easy – just google it: “vegan in vegas.” You’ll find lots of blog posts and almost all, of late, will direct you to Wynn and Encore resorts. Steve Wynn went vegan (I can’t confirm if he still is) and as a result all of the restaurants offer a vegan menu. How freakin’ awesome! Knowing this was the place I would visit to dine most often, but that I also wanted to be in an environment that was quieter and a little “less Vegas”, we opted to stay at Trump Hotel Vegas. No casino, no smoking, rooms with a sink, stove, refrigerator and microwave. And steps from Wynn. Perfection.
We arrived yesterday and immediately walked over to Wynn to have lunch at the La Cave. I guess I thought it was too good to be true so before walking in I asked the hostess, “Is it true you have a vegan menu?” She replied, “We have vegan menus at all of our restaurants.”
Tears of joy, people, tears of joy.
La Cave is a tapas restaurant – small plates – and the server suggested two tapas for a meal. I went with this roasted beets with vegan cheese and pistachios plate and with the Gardein Chick’n with celery root puree and lemon caper sauce.
Absolutely fantastic! Both plates of food were beautiful and perfectly prepared. Great first meal for this vegan in Vegas!
Later that evening we attended the wedding rehearsal dinner at an old style Italian joint. It was too dark for food photos so I’ll just say the salad and spaghetti and marinara were just fine. So was the wine.
Back tomorrow with more Wynn vegan eats and maybe a wedding picture, or two!

I visited vegas for my first time earlier this year and was BLOWN away at how awesome they were at accommodating my gluten-free vegan palate! They are the rock stars of accomodation – the rest of the restaurants in the country need to take note!
Right, @BarefootJacq:disqus?! It’s really wonderful to go into a “mainstream” restaurant/resort and feel normal! LOL
As vegans in Vegas, we go to the Wynn restaurants for our “special occasions” meals. Daughter and son-in-laws proposal night, daughters 40th birthday, other family birthdays, Mothers Day and Fathers Day have all been celebrated at the various Wynn restaurants. You can’t go wrong!

Go to the Wynn or Encore and get the vegan French Toast for breakfast. I won’t wait for the “thank you” and will just say you’re welcome now.
Well, okay, I guess I know where we’re going for breakfast! 🙂

While in Las Vegas, you may want to try Pura Vida, 1236 Westen Ave. Not too far from the Wynn and Chef Myra is the best! They only serve breakfast and lunch. Also try the Red Velvet Cafe across the street from the Wynn in the Fasion Show Mall. (I frequent and live closer to the westside location) All menu items can be made vegan. These are two of our favorite restaurants as vegans living in Vegas.
I strongly agree. Chef Mayra is an artist and her food is amazing. Also check out the Eating Vegan in Vegas blog for other places that are vegan or vegan friendly so you can check out places off of the Strip.

I am not much of a Vegas person but ever since I read about the Wynn menus a while back I have been eager to give Vegas another shot!
@VeggieNextDoor:disqus, we used to love Vegas but have found that we’re not as “into it” as we used to be. But staying at the Trump Hotel (no casino, no smoking, the rooms are suites with a kitchenette) and being steps away from Wynn is a winning combo for our quieter lifestyle! 🙂
