This is my third post about eating vegan in Vegas and of course it’s now crystal clear. This hasn’t been about eating in and around Vegas. This has been about vegan dining at Wynn Las Vegas resorts. With zero apologies.
There were two purposes to this trip – officiate a wedding and continue to do my consulting work on the road. This wasn’t vacation. Trump Hotel was perfect for quiet (no casino, but already knew that ahead of time and had the best pay by phone bill casino sites bookmarked on my phone already!) accommodations and for close proximity to the most vegan-friendly resort in town. Yesterday I worked all morning at Trump – starting at 6am (9am EST, where several of my clients are based) and when I wrapped up a vegan lifestyle coaching Skype session at 1pm local time I realized I had skipped breakfast. We dashed to Society Cafe at Encore for the Double-Down Wynn Burger (and fries and chocolate milkshake).
All vegan, baby! And so, so good!
Back to Trump for more work, this time with my West coast clients. Then it was suddenly dinner time. Back to Encore for vegan sushi at Wazuzu.
I had the Jade Dumplings with spinach and shitake mushrooms and the Vegan Crunch Roll with string beans, cucumber, avocado and topped with Japanese rice crackers. A fantastic meal!
Next time I’m in Vegas I might (I say might) venture elsewhere. Or I’ll go back to Wynn and Encore for every single meal.

The key to a struggle-free vegan diet is a varied diet
The food is so lovely. I had such a great time staying at the Wynn / Encore – their vegan friendly room service is pretty spectacular.
