Oh my goodness! There’s a lot of vegan cooking in Colorado Springs going on!
This is one of the those “pinch me” mornings. Nearly one year ago Dave and I packed up our home in New York and moved across country, to Colorado Springs. We both had professional dreams. His, to work as a triathlon coach. Mine, to make a living as a writer, consultant and vegan lifestyle coach and educator. With a lot of hard work and networking (yes, I promise to write that next piece for the Professionalize your Passion series!) it’s coming together. The next four days are a perfect example.
Today and tomorrow I will be at the Colorado Springs Women’s Living Expo, doing a presentation – Healthy Food Preparation for the Busy Non-Cook – and cooking demo followed by signing copies of Vegan for Her. Print this coupon for $2 off admission:
Monday I will be going into a client’s home where I will provide her, and five of her friends, group kitchen coaching. They are busy grocery shopping this weekend and I’m preparing recipes and techniques to empower them to spend more time in the kitchen making healthy and simple dishes for the whole family.
Tuesday morning I’m taping a series of educational videos – offering tips and techniques to make simple, plant-based meals and demonstrating several recipes – for the Center for Creative Leadership.
Tuesday evening I’m offering a private, live, ONLINE class – Healthy Food Preparation for the Busy Non-Cook – on Google+ for only $7.50! You can still register for this class!
I know that one of the many reasons I am able to work my passion is because of you, readers. Many of you have been on this journey with me since the blog launched in 2010. Others have joined along the way. All of you have helped me, encouraged me, and learned with me. Thank you.

Good things DO happen to good people! I remember reading your posts as you prepared to pack up your apartment and travel across country. I’m so happy for you both. You’ve worked hard to realize your dreams!
