Vacation? Almost!

Happy Friday! I’m writing from the Denver airport. where I just devoured a delicious tofu scramble from Root Down (DIA).

I’m a devoted United Airlines frequent flier but when I find myself traveling Southwest, well, I shed a little tear of happiness as I plan my Terminal C breakfast (and today I ordered a squash, brussels sprouts and tofu salad to-go to enjoy, to enjoy on the plane later). It’s the little things, right?

Those of you who have been reading for a while know that this is the time of year I meet two of my sisters and my niece in Florida to spend a week with my parents – snowbirds – for their last bit of time down south before returning to the Midwest for the spring and summer. It’s been a busy few months and I’m really looking forward to rest and relaxation. But over the years one big thing has changed about this vacation. I’m now self-employed and, for me, that means “vacation” looks a little different. I will spend a few early hours each day being in touch with consulting and coaching clients and staying on top of meal planning, as well as the book tour.

So, I’ll confess that though I’m leaving for vacation today, I will actually be teaching a cooking demonstration class tomorrow in Merritt Island, FL. But it just doesn’t feel like work. My aunt and I will get up  early, visit during our two-hour drive and get to meet new vegan and veg-curious folks while pressure cooking. What’s better than that? The tour continues to grow and I thought I’d share some of the upcoming stops:

So, as I enter vacation mode, I’ll just mention that I don’t plan to write a vegan news you can use post Sunday (vacation, after all!), but I just might share some vacation food posts!

  1. Oh man, I wish I could come down to NOLA Veggie Fest and see you! It’s only 6 hours away. But gotta save $$ for Austin at the end of May. But I’ll see you there!!!
