Vegan MoFo 2013 VIDEO #5: Tofu Scramble

Another day, another video. How about a tofu scramble?

Video Notes:

  1. You can find my friend Ashley – the gifter of the “I’m Gonna Blog that Shit” t-shirt – at The Unintentional Vegan.
  2. Check out the blogroll on VeganMoFo.com to meet other awesome bloggers.
  3. Vida Vegan Con is the definitive conference for vegan bloggers!
  4. I said B-12 tastes cheesy in the video. I cannot confirm or deny that, but what I meant to say is that nutritional yeast tastes cheesy.

JL’s Quickie Video Tofu Scramble

INGREDIENTS

1 teaspoon extra virgin olive oil (or oil of your choice or vegetable broth if you don’t want to use oil)

  • Garlic (about two cloves, diced)
  • Onion (about 1/4 cup, diced)
  • 1 14-ounce block of firm or extra firm tofu, pressed
  • 1 and 1/2 teaspoons turmeric
  • Kale (as much as you want), torn into bite size pieces
  • Tomato, diced (about half a cup)
  • Bragg’s Liquid Aminos (about 1 teaspoon), soy, or tamari sauce (or consider Black Sea Salt)
  • Ground black pepper, to taste (optional)
  • Nutritional yeast, to taste (optional)

INGREDIENTS

  1. Heat olive oil or vegetable broth is a skillet on medium-high heat. Add onion and garlic and saute for a few minutes.
  2. Crumble tofu into the skillet (I used my hands) and add the turmeric. Stir occasionally and cook on medium or medium-low for about five minutes.
  3. Add the kale, tomatoes, and Bragg’s Liquid Aminos, stir, cover and simmer for another 3 – 4 minutes.
  4. Serve with ground pepper and nutritional yeast.

YIELD: SERVES 2- 4

  1. Great shirt! That was so sweet of Ashley to have it made for you. I really enjoy her blog! Your scramble sounds delicious. I always love nutritional yeast in my scrambles too for extra cheesy-goodness.

    1. Isn’t Ashley a doll, @CadrysKitchen:disqus? It was a sweet gesture. Glad to see you’re on the nooch scramble kick, too!

  2. Thanks for the shout out – you’re a sweetheart! Tofu scramble is one of my faves and nooch is just the icing on the cake – so to speak 🙂
