Another day, another video. How about a tofu scramble?

JL’s Quickie Video Tofu Scramble
INGREDIENTS
1 teaspoon extra virgin olive oil (or oil of your choice or vegetable broth if you don’t want to use oil)
- Garlic (about two cloves, diced)
- Onion (about 1/4 cup, diced)
- 1 14-ounce block of firm or extra firm tofu, pressed
- 1 and 1/2 teaspoons turmeric
- Kale (as much as you want), torn into bite size pieces
- Tomato, diced (about half a cup)
- Bragg’s Liquid Aminos (about 1 teaspoon), soy, or tamari sauce (or consider Black Sea Salt)
- Ground black pepper, to taste (optional)
- Nutritional yeast, to taste (optional)
INGREDIENTS
- Heat olive oil or vegetable broth is a skillet on medium-high heat. Add onion and garlic and saute for a few minutes.
- Crumble tofu into the skillet (I used my hands) and add the turmeric. Stir occasionally and cook on medium or medium-low for about five minutes.
- Add the kale, tomatoes, and Bragg’s Liquid Aminos, stir, cover and simmer for another 3 – 4 minutes.
- Serve with ground pepper and nutritional yeast.
YIELD: SERVES 2- 4

Great shirt! That was so sweet of Ashley to have it made for you. I really enjoy her blog! Your scramble sounds delicious. I always love nutritional yeast in my scrambles too for extra cheesy-goodness.
