This week I am eating … (04/18/13)

What a week! I have a major, major deliverable due at the end of the month for one of my corporate clients so I have been swamped! A surprise snowstorm yesterday that forced me to postpone the second session of my vegan lifestyle class (I suppose if you’re from Colorado an April snowstorm isn’t a surprise at all, is it?). Needless to say, I’ve been scrambling, trying to keep a lot of balls in the air! While I keep juggling, I thought I’d share some fun and food updates through pictures.

Saturday night the Colorado Springs Vegan & Vegetarian Group MeetUp had a pizza and bowling night!

Sunday I thawed it, quickly pressed it and then marinated it in avocado oil, low-sodium soy sauce, red wine vinegar and a little chili powder and garlic for one hour before grilling it. We also grilled sweet peppers and a mix of mushrooms, garlic cloves and onion.

Monday morning I juiced an entire bunch of carrots, a bunch of celery, five tomatoes and two apples. I enjoyed that juice over a 24-hour time period (stored in an airtight, glass jar in the fridge).

Tuesday night Dave and I went to the opening ceremony of our new Buddhist Center and had dinner at our favorite Chinese restaurant in Colorado Springs, Silver Pond. I had the Mandarin “Chik’n” (described as “glazed gluten”…YES!).

Silver POnd Chinese, glased glutenYesterday, in honor of the snow storm, I made a quick breakfast in the rice cooker.  Rolled oats (1 cup), almond milk (1 cup), water (1 cup) + dried coconut flakes and pumpkin seeds on the brown rice setting. Served with banana.

While eating my breakfast I heard a knock on the door. I received my long-awaited No Meat Athlete Cycling jersey!

no meat athlete cycling jerseyNow I await the thaw so that I can get out on my bike and enjoy spring, which is most surely around the corner!

  1. Silver Pond was also my favorite, but they didn’t have any sort of “chik’n” back then! We lived within their small delivery area and I had their sesame tofu for dinner many, many nights… Yum.

    1. Ah, that’s it, @twitter-464809434:disqus! We get carry out so I always use their online menu. It was our first time dining in and it was on the special menu of the day! Lesson learned? When ordering carry out ask about the special gluten of the day! 😉

  2. I feel so bad for you guys who are STILL getting snow even though it’s supposed to be spring!! But that bike shirt will make the wait worth it when spring finally comes!

    1. Yeah, @a2da25b31bb18ec3b56b64a7de22d4cc:disqus, I’ve been going on and on about how awesome a Colorado winter is (60’s in Jan. Feb and March!) but have recently learned that March and April are the wild card and I’m told to expect anything until at least May 15. good to know! LOL
