Finally, I thought I should report back on my JL-EGG experiments. Once upon a time I made an omelet with The Vegg. It was awesome. Then I made a tofu scramble with my homemade JL-EGG. Also awesome. So I decided it was time to try out the JL-EGG as an omelet.Looks like it’s going to work, doesn’t it? Well, it didn’t. It didn’t firm up. I couldn’t flip it. But it tasted divine! I used black salt this time – hello “egg”-ier tasting vegan egg! I scooped the scramble into a tortilla with guacamole – lemonade out of lemons, people – and enjoyed a fabulous breakfast wrap.
I’m heading into a busy weekend, including a food writing class with the fabulous Urban Vegan at the Natural Gourmet Institute! I hope you have a fun weekend planned, too!

I sort of looks like a fritatta… do you think it would have held together if you put it in the oven for a bit? Either way, I bet it was tasty! 🙂
Yeah, I was actually thinking that it would have done well in a quiche pan in the oven. Or perhaps adding more extra firm tofu to the mix. Delicious experiments ahead! 😉
