Have you noticed the Saturday Meal Plans? Several readers and clients requested that I provide meal ideas on the blog and I have really enjoyed going through my recipe index and pulling together a daily menu once a week. It gives me the opportunity to demonstrate how easy and delicious it is to include the five fabulous vegan food groups – vegetables, fruit, beans/legumes, grains, and nuts/seeds – into you diet.
These first two dishes can be prepared in minutes and, if you have a pressure cooker, your bean and barley soup will be done in no time, too. Enjoy!
Breakfast: “Ice Cream”
Lunch: Chickpea Salad Sandwich
Dinner: Bean and Barley Vegetable Stew
