Do you have lots of cooking to do next week for Thanksgiving? Then you deserve a day of meals that take very little time to prepare!
Breakfast: Coconut-Avocado-Mango Smoothie. Don’t have fresh coconuts on hand? Just use your favorite coconut water – and opt for frozen mango.
Lunch: Tofu Pumpkin Soup. I made this in a measuring cup in the microwave. Seriously.
Dinner: Black-Eyed Pea & Collard Green Pizza. Use any canned bean and whatever leafy green veggie you have on hand.
Dessert: Vegan Marshmallow Sandwich. This is a fun, kid-friendly treat.

I would happily eat all of these meals, in one day or any time. The marshmallow sandwich part of your post title also made me smile, because the ingredient list sounded super healthy and then…marshmallow sandwich 😉 My sort of balance!
