Good Friday morning! Wednesday I left very cold, snowy, icy Colorado Springs
for Southern California.
I’m here for just a short time for Expo West.
I’m here on behalf of three clients and running around having a ball. Today is the big first day of the show and I can’t wait to see what exciting vegan food and natural products we can expect to see in stores soon.
Oh, yesterday I made a fast lunch before heading to the convention center and I just had to share: I toasted two pieces of chia and flax bread from a local store (I’m staying with my aunt). In a dry skillet I warmed a Wildwood sprouted tofu patty with a slice of Daiya cheddar cheese. I took one slice of toast, placed it on top of the patty and cheese and flipped in the skillet. Then added the other slice of toast – a quickie grilled sandwich, no oil or vegan butter required.
It was delicious! I had a hearty portion of raw vegetables with it. Hit the spot before my long day.
