Yesterday I was at Whole Foods preparing for a class I’m teaching there tonight. I decided to pick up a few things and to look for some of the products I tried at Expo West. While in the frozen foods section I saw a woman looking at the Qrunch burgers. I told her about the Italian Qrunch Burger Napoleon I made and she grabbed a box. She said, “Now I know what to do with my spaghetti!” Which, of course, made me think of spaghetti. Isn’t it cool when two strangers can share ideas? My mother always talked to people she didn’t know in grocery store lines and I got that from her. I’m glad.
Anyway, last night for dinner I shared the idea for dinner and my non-vegan but vegetarian-at-home husband executed.
He baked the Qrunch burgers (20 minutes). While they were baking he made the spaghetti and heated up a jarred marinara sauce (he added two handfuls of a baby spinach and arugula blend, covered and simmered). When everything was ready he tossed the spaghetti in some of the sauce, plated it, served the baked Qrunch burger over it, added more sauce and served with Parma.
Such a quick, simple and delicious meal!
