Okara (or tofu) Broccoli Bites

Ingredients
- 12- ounces broccoli steamed and riced
- 1 cup okara or soft tofu
- 1 flax egg 1 tablespoon ground flaxseed whisked with 3 tablespoons hot water
- 1 teaspoon minced garlic
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- 1/2 teaspoon smoked paprika
Instructions

Preheat the AirGo on 400 °F set for 22 minutes.

Combine the steamed and riced broccoli with the okara (or tofin a medium bowl. Add the flax egg, garlic, thyme, salt, pepper and paprika. Mix well. Form into 12 bites or slider size patties.

Place 6 bites on a perforated parchment paper or silicone round. Spritz with vegetable oil. Place in the AirGo and cook for 12 minutes. Flip over and off of the silicone or parchment paper directly onto the air fryer basket. Spritz the top side with more vegetable oil and continue cooking for 10 more minutes. Repeat with the remaining six bites.

Serve with peanut sauce and fresh cilantro (optionaas appetizers. These also make a great meal for one or two people (six bites = approximately 182 calories).
