Good news, Colorado Springs! The fabulous women behind Nourish Organic Juice now have a brick and mortar location!
I heard about Nourish when I first moved to Colorado Springs. Teresa Farney, the food editor of The Gazette, told me they offered mobile juicing (and cleanses) and that they would soon be opening a storefront. This week my friend Lisa – the founder and organizer of the Colorado Springs Vegan and Vegetarian Group MeetUp – and I had lunch at Nourish. We were blown away.
Juices, Kale Chips, and Smoothies…oh my!
The space at Nourish is huge.
Nourish was serving two soups that day, a Split Pea and Indian Lentil. They let us sample both before we decided. Both were absolutely fabulous – I went with the lentil – with this kale salad made with hemp seeds.
That is half of a kale salad!
Lisa and I split the kale salad. Half a salad and a bowl of soup was a perfect, filling lunch!
As I walked out I told Evelyn and Nicole, the owners, to expect to see a lot of me! In fact, that night I sat up a lunch MeetUp at Nourish in May (if you live in Colorado Springs, I would love for you to join our MeetUp!).
