I finally tried the Vegan Egg!

The images of this new, plant-based egg have been filling up my Instagram, Pinterest, Twitter and Facebook feeds! I ultimately ordered it from Amazon (you can also get it on VeganEssentials.com) and my husband Dave gave it a try over the weekend.

The instructions suggest using very cold water when mixing, as well as using a blender. Dave added water and ice to a large measuring cup and then measured out the ice-cold water. He opted to whisk in a bowl, however. It took about 8 – 10 minutes in a hot skillet (with a little extra virgin olive oil), stirring frequently. It immediately became “scrambled-egg-like.” He seasoned it simply: salt and pepper.

First impressions? Looks like eggs. Texture like eggs. Taste? Not so much. It’s clear that one might consider treating the vegan egg like tofu – taste and flavor is in the hand’s of the chef! I decided to build a sandwich out of it.

Now we’re talking! This was an incredible breakfast sandwich!

The next morning we reheated leftover chili + leftover vegan eggs to make this breakfast burrito.

Another winning combination! 

I think we’ll continue to use the vegan egg as part of something (versus on its own). And of course I want to try it in baking, too. I do think that it could be very nice combined in a tofu scramble – or scrambled on its own with tons of veggies. I also think adding black salt (which is actually pink) can add an “eggy” flavor to it, which might make the solo egg a bit more appealing.
