Home for Earth Day 2015

Greetings from…wait for it… Colorado Springs! Yes, I am home from the most recent leg of my book tour (Minneapolis, New York, Maryland, and California) and I will be home for 16 days! I arrived home just in time yesterday to see a really great piece in the Gazette: Vegans in Colorado Springs have plenty to look forward to this year. We sure do!

I celebrated my return, and Earth Day, by working from home today and cooking.

Pressure cooking:

  • black beans (soaked overnight, ten minutes at high pressure, natural release)
  • garlic-dill rice (long grain brown rice (with freeze-dried dill and 2 cloves of garlic, 22 minutes at pressure, natural release)
  • adzuki beans (unsoaked, 20 minutes at high pressure, natural release)
  • quinoa (1 minute at high pressure, natural release)

I also made a big Super Soy Salad for lunch.

Not a bad way to spend Earth Day:

  • no driving (save gas!)
  • use a pressure cooker (save energy!)
