On most days, I want my meals on the table ASAP.
And I think you might, too.
And that's why I wrote my latest cookbook.
That's right, my sixth cookbook will be released in August!
I dedicated my winter to creating a resource that I know is needed. I teach cooking classes locally and around the country and the number one request I get is this: I want fast and easy recipes!
I get it.
I'm busy, just like you. I'm either working or volunteering and can never find enough hours in the day. And I'm also a vegan foodie. I love cooking and I love eating. I just happen to want to do both pretty quickly (and if you follow me on Facebook or Instagram, you know that's pretty much how I cook).
I didn't really cook much for many years because my husband handled all of that. Then I went vegan and he turned me loose in the kitchen. That's when I started my blog and that's when I chose to transition my career and dedicate myself to spreading the good vegan word.
But my approach to cooking has always been about quick and simple. That's why I pressure cook (and wrote Vegan Pressure Cooking). It's why I air fry (and wrote The Vegan Air Fryer). It's why I meal prep (and wrote Vegan Meal Prep).
And here I am today with the news that Fast & Easy Vegan Cookbook is coming your way on August 27!
Every single book I have ever written is directly connected to my real life. I'm not creating recipes or books because they are trendy. I'm sharing my real world approach to cooking with you because you live in the real world, too.
In my latest cookbook, I've drilled down chapters to focus on the variety of ways we can get meals on the table fast: 5-ingredient recipes, 30-minute meals, pressure cooking (yes, Instant Pot fans, an entire chapter!), sheet pan recipes, one-pot meals, and, hey, how about a recipe chapter with no cooking at all? I also share tips on prepping ingredients in advance and even prepping some of the recipes in advance and cooking later in the week.
