You all know that I’m not someone who likes to spend a lot of time in the kitchen (that’s one of the reasons I became obsessed with vegan pressure cooking). Same goes for the holidays – those special occasions are best spent with those who matter most to me. My husband and I are all about making a yummy, festive meal – as quickly as possible. Here are very quick and easy vegan Thanksgiving recipes – just the basics!
I love Field Roast’s Celebration Roast. Last Christmas I chopped up apple, onion, a carrot and placed the thawed roast in a slower cooker (okay, it was my Instant Pot, but I used the slow cooker function). I added about 1/2 cup vegetable broth, placed the vegan roast on top, and rubbed about a tablespoon of vegan butter over it. I cooked it on high for about an hour. If you want to pressure cook the roast, do so on low pressure for eight minutes and use a quick release.
My favorite way to cook mashed potatoes is in the pressure cooker (no surprise there, right?)
Use any kind of potato: sweet, fingerlings, russet, or a combo of any of them and then just follow these easy instructions:
1/2 cup vegetable broth
2 large potatoes, cubed
Splash of almond milk (or other non-dairy milk)
Dab of vegan butter (use homemade!)
Pinch of salt
Add broth and potatoes to the pressure cooker. Cover the pressure cooker and bring to pressure. Cook at pressure for 6 minutes. Allow for a natural release.
Remove the pressure cooker lid, away from you.
Add almond milk, salt and vegan butter and use a potato masher to mash to desired consistency.
YIELD: Serves 2

Simple Sautéed Greens

1 teaspoon extra virgin olive oil
4 cloves garlic, diced into big chunks
1 to 2 tablespoons lemon juice (about half a large lemon)
4 – 6 cups loosely packed greens
1/4 cup almond slivers
Heat oil in a skillet on medium high. Add garlic and saute for a minute or two.
Add greens and lemon juice to the skillet and toss quickly with tongs.
Cover the skillet and let cook for just 30 seconds.
Removed lid and toss in almond slivers.
