How many vegans reading remember those last couple of things we didn’t think we could give up when moving from vegetarian to vegan? (I’m raising my hand.)
Eggs, cheese and yogurt were my big obstacles.
I didn’t care about creamer because I’ve always taken my coffee black. I didn’t care about milk because once I started drinking skim milk it was basically water.
And how many reading are vegetarian or veg-curious and face those similar obstacles?
Well, there’s good news on all fronts. Tofu is a great substitute for eggs in a scramble or fried egg sandwich. Cheese, well, hello Miyoko’s Creamery. And yogurt. There have been a variety of brands on the market and I’m delighted to tell you that I recently had a chance to try DREAM™ Brand’s new Coconut Dream® Non-Dairy Yogurt and Almond Dream® Non-Dairy Yogurt and I love them both! I’ve been adding it to smoothies in the morning (Mmm Mmm) and I’ve been packing the berry flavored yogurts in my lunch bag (stir in nuts and seeds for a nutritious afternoon snack).
And recently, with the abundance of honey crisp apples, I was inspired to do one of my favorite things: make a recipe that could serve as either a breakfast or a dessert (vegan food is awesome like that).
Grab your pressure cooker (or a saucepan – just cook it longer!) and make this homemade applesauce yogurt parfait.
Chunky Applesauce and Vegan Yogurt Parfait
Ingredients (Serves 4)
- 1/4 cup water
- 3 cups diced apples
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 2 6-ounce containers Coconut Dream Vanilla Yogurt
- 1 cup granola
Instructions
Heat water in an uncovered pressure cooker (use the saute function on an electric pressure cooker). When the water comes to a boil, add the apples, cinnamon, nutmeg, and ginger. Combine well. Cover and bring to pressure. Cook on high pressure for 3 minutes. Use a quick release.
Remove the cover. Use a potato masher to mash the apples into a chunky sauce. If there is remaining liquid, simmer until fully absorbed.
Set aside or refrigerate.
To assemble the parfait, begin with a layer of yogurt, then applesauce, then granola. Repeat one or two more times.
Dig in!

Yogurt is the one item I miss most.
I love to make raita, that divine Indian side made from yogurt and cucumber. I hope there is a plain version.
I like vegan yogurt in my overnight oats. I also use it to make sauces like tzatziki and raita.
I go through yogurt phases, and I *do* remember when, after being vegan for a while, I wasn’t able to find much. there are so many options now, I will look for Dream!

I like to use plain nondairy yogurt to replace vegan mayo, but in a parfait sounds pretty tasty too!

I just got a shipment from Vegan Essentials that included some onion dip mix, so I’m going to mix it with vegan yogurt for a tangy and slightly lower-cal dip!
I use yogurt in my overnight oatmeal. Add some chia seeds,cinnamon & fruit of choice. Bananas or blueberries are my favorite though any fruit is good!
I love a tangy dollop of yogurt on top of things like a lentil daal or a nice curry.

I like to use plain unsweetened yogurt in place of sour cream for things like chili or spicy soups.

I like to mix it with some chia seed and fresh berries, so yummy! Would love to try this dream because honestly vegan yogurt leaves me missing some greek yogurt.
