Atlanta Veg Fest (and meals this week)

It’s Thursday and I’m packing again! I will be in Georgia Saturday for Atlanta Veg Fest. At 4:15 I’ll be doing a demo/talk: Want Wholesome Vegan Meals Fast? Vegan Pressure Cooking to the Rescue! Will you be there? I’d love to see you!

I got home very late Monday night from the SoCal Vegfest – my first flight was delayed, which led to me missing my second flight. I made lemonade out of those travel lemons, though, and trained over to Terminal C at DIA to have dinner at Root Down. The vegan bento box rocks.

I was pretty tired Tuesday and took the day off from work (it’s good to be the boss!). I made this comforting late lunch: Gardein fishless filets, salad, and a little bubbly!

I woke up yesterday rested and ready to get back at it. I made another batch of hot grain cereal in the pressure cooker, this time with dried apricots, pecans, almonds, cinnamon and nutmeg. The mornings have been frigid here in Colorado and this is my breakfast of choice!

Later in the day I did a photo shoot for a newspaper that wants to run my Beer Baked Sweet Potato Fries recipe. This led to a delicious dinner!

When I tossed the fries with the spices I used a little of the marinade + an extra dab of red miso. Mmm Mmm.

Now I’m off for a busy day of consulting, followed by a Masquerade Ball tonight, and then up early tomorrow morning for travel to Hot-lanta. Have a great Thursday!
