Last month at Expo West I met Justin and Emily from the Beyond Meat marketing team. It was love at first squeal! (Okay, I squealed.)
I’ve been a big fan of Beyond Meat since it came out and now I’ve achieved Super Fan status. They kindly sent me coupons to get out there and try the new Beyond Meat Beef-Free Crumbles (score, found them at the Colorado Springs Whole Foods on New Center Point), a tee-shirt, and stickers (one of which I now use to identify my suitcase while traveling!).

Beefy Socca Pizza (use this socca recipe and sub Beyond Meat Beefy Crumbles for the seitan)
Beyond Meat Feisty Crumbles + Potato Breakfast Tacos (no recipe, just saute onions and potato in a skillet, add the feisty crumbles, and make your tacos!)
Chicken-Less Taquitos (no recipe, just saute the chicken-less strips, shred them, then roll them up in a tortilla and fry until golden brown)
As many of you know, I am vegan and my husband is not. Of these five dishes, he made three of them. He loves this stuff and I consider Beyond Meat a form of vegan activism! It’s so good, so simple to use, and super-pleasing to the non-vegan.

I have made so many yummy things with Beyond Meat. Chicken pot pie, fajitas, but never the chicken salad. On the menu for Sunday.
There are really only a few beef foods I would consider making anymore. The only one I ever really get much of a craving for is tacos. I love my vegan tacos, but some beef would add a bit of nostalgia from growing up.
I use the chickn in green chile posole and the beefy crumbles for killer enchiladas

I have at least five bags of gluten free pasta in my cupboard that I’ve been meaning to use but wanted something out the ordinary to toss in with it. Pasta with either the chicken or beef strips would be great. A nice gluten free, vegan meal for me. Simple but filling.
