Vegan meals, without a plan

This is my first weekend home in three weeks.  As I’ve mentioned in a previous post, I’m a bit obsessive about planning and prepping meals over the weekend so that I have quick and easy options for lunch and dinner throughout the week.  All of this travel has thrown me off a bit.

So imagine my delight Saturday morning, when I realized I could actually stock up at the health food store, Trader Joe’s and the farmer’s market.  Oops, I forgot, I’m leaving again, next Thursday.  So I just picked up a few things at the farmer’s market (kale, obviously) and called it a day.

With not much in the house, I give you my version of what a vegan eats when the planner hasn’t planned.

Breakfast Saturday:  My husband and I went to the farmer’s market and he pointed out The Catery, owned by a new friend he met cycling.  We popped in and he ordered a scone. The baked items were not vegan (but I learned that the pastry chef makes vegan cakes….Dave, my birthday is coming up!)  I opted for this salad:

Bok choy tossed with ramen noodles, sunflower seeds, slivered almonds in a soy based dressing. I added some crumbled tofu. The dressing is amazing (it’s made with apple cider vinegar, which I love).

For lunch I devoured a refried bean, onion, Daiya cheese, salsa wrap so quickly I didn’t get a photo.

For dinner my husband grilled green and jalapeno peppers and onion (to go with his chicken). I made Daiya cheese toast and started tossing thing is a bowl. Tofu, lentils, yellow tomato, yellow beans, avocado, onion, sesame oil, brown rice vinegar, sesame seeds, maple syrup and a dash of Herbamere, dulse flakes and cayenne pepper.

My salad pictures never come out as beautiful as they truly are. Which is one of the reasons I purchased a Canon PowerShot sx20 IS. You’ve been warned:  better and MORE pictures are coming to the blog soon!

This morning I’m off for an 8-mile run. For a run over six miles I like to have an actual breakfast.

Now I guess I need to really go run those 8 miles, but rest-assured that later today I will, at a minimum, press and marinate some tofu, whip up a bean burger and make quinoa. A girl’s gotta eat this week!
