Yep, I was crazy enough to do it. I made a marshmallow sandwich.
I toasted an Ezekial English Muffin. I cut it in half and added three Sweet and Sara vanilla marshmallows, a teaspoon of unsweetened, shredded coconut and a teaspoon of Navitas cacao nibs. I microwaved the sandwich for thirty seconds. And then I squealed with delight.
If loving this is wrong, I don’t want to be right.
What is your favorite way to enjoy vegan marshmallows?

ETA: LAST CALL! Voting ends today! I am attending the BlogHer conference in August. Yesterday there was a call for “Room Of Your Own” sessions—topics that aren’t necessarily covered in the formal program.
I proposed the following:
I could be your mother
As a new blogger, turning 46 this year, I have found myself in a community of 20- and 30-something food, health and fitness bloogers. I would love to bring together the “older” bloggers to talk about our role in the food, health and fitness blogging community.
Related, within a month or two of starting my blog I wrote a piece on BlogHer about this: The 45 year old in the middle of the (virtual) room
If you are attending BlogHer and are interested in this topic, please go to my submission and indicate “I would attend this session” and/or indicate if you are interested in presenting. Please share this with any of your blogger friends who might be interested. Thanks! VOTING ENDS MARCH 23!
