Candy-Coated Buckwheat Granola (Raw)

Over the past year I have eaten a fairly common vegan diet of beans, greens and grains.  I live for beans. Quinoa and farro make me swoon. And you know I love kale.

As I started eating higher raw I was faced with a dilemma. How could I consume raw beans and grains?  Sprouting!  I started with lentils, then moved on to quinoa and azuki beans.

This week I tried my hand at sprouting chickpeas and buckwheat groats.  I have been using a really great web resource, Sprout People, to determine how, and how long, to sprout. The chickpeas will take a few more days but the buckwheat groats sprouted perfectly in 36 hours.

I decided I wanted to make raw granola with the sprouted buckwheat.

JL’s Candy-Coated Buckwheat Granola (Raw)
Makes 4 cups

INGREDIENTS

*2 cups sprouted buckwheat groats, rinsed and drained (2/3 dry, sprouted for 36 = 2 cups sprouted)
*2 T sesame seeds
*1/4 cup each (raw):
sunflower seeds
cashews, chopped
walnuts, chopped
almond slivers
*1 apple, diced
*3 medjool dates, pitted and diced
*1/2 cup filtered water
*2 T raw, dehydrated, unsweetened coconut flakes

METHOD

In a large bowl mix sprouted buckwheat, nuts and seeds.  Place apple, dates and 1/4 cup water in a blender. Blend to a puree consistency.  Add the remaining water and coconut flakes and continue blending to desired consistency.  Pour the puree over the buckwheat, seeds and nuts and mix well

Spread the mixture on one Excalibur ParaFlexx sheet.  Dehydrate on 105F for 24 hours (at 10 -12 hours flip over onto the tray screen and remove the ParaFlexx sheet).

Candy? Nope, not at all.  When I was mixing the granola with the sugary apple-date-coconut puree it just had that shiny, sweet, confection-like look.  The granola isn’t overly sweet at all. But I do want to eat it like candy.

  2. Oh that sounds great. I don’t like sugary sweet granola, so this really sounds good. I’ve never sprouted anything (on purpose) or made granola. I did do a granola bar, but not quite the same as crunchy granola.

  3. I am intrigued! I always keep homemade granola on hand and I love sprouted foods – I like the idea of combining them! I used to sprout just about everything that I could think of, but somehow I fell out of the habit. I think I need to pick up the habit again. This granola looks so good!

    1. I’m gone a bit sprout nuts lately. Just ordered a kit from Sprout People with a hemp bag and a variety of seeds. Lots of experimenting ahead 😉

  4. Sprouting is so much fun, I’m finally trying buckwheat and need to try more recipes with sprouted beans. This granola recipe looks fabulous, but I need to restock on some nuts before trying it. 🙂
