I could be your mother (at BlogHer!) + High raw eats (Kale & Sprouted Bean Salad + Sprouted Humus Chard Wrap)

I’m in Atlanta for a conference so while I’m away I thought I’d share a few raw meals I enjoyed earlier this week.

Before I get to that, though, I wanted to toss out an idea.  I am attending the BlogHer conference in August.  Yesterday there was a call for “Room Of Your Own” sessions—topics that aren’t necessarily covered in the formal program.

I proposed the following:

I could be your mother

As  a new blogger, turning 46 this year, I have found myself in a community of 20- and 30-something food, health and fitness bloogers. I would love to bring together the “older” bloggers to talk about our role in the food, health and fitness blogging community.

Related, within a month or two of starting my blog I wrote a piece on BlogHer about this:  The 45 year old in the middle of the (virtual) room

Now, to those raw eats…

Sunday, after a six-month hiatus, I took a yoga class.  Why do I tell myself I don’t have time for yoga?!  Nutty.  It was wonderful.  When I returned from the yoga studio I logged on to catch up on a few blogs and came across a fabulous salad dressing recipe from Kristen’s Raw.  I was hungry.  I made the dressing.

Kale & Sprouted Azuki Bean Salad

INGREDIENTS

*2 cups of kale
*Kristen’s 4-Ingredient Magic Dressing (for one)
*1/2 cup sprouted Azuki beans, rinsed and drained
*Half an avocado
*3 raw crackers, crumbled

METHOD

I whipped together Kristen’s dressing, using almond butter instead of cashew butter and added kale, torn into pieces, into the bowl.  I then mashed the avocado into the salad mix and stirred in the azuki beans.  I topped it off with crumbled crackers.

The dressing is fantastic and I can’t wait to try it with cashew butter.

Tuesday was a mostly-raw-‘til-dinner day. Green juice in the morning (apple, romaine, celery, cucumber, fennel, ginger and lime juice), a green smoothie mid-morning (hemp seed, water, spinach, blueberries, frozen banana and 2T uncooked rolled oats) and, for lunch,

sprouted Asian-Azuki Bean Humus and avocado wrapped up in a huge Swiss Chard leaf (let me count the “yums”).  I rounded out my high raw day with a pear later in the afternoon and raw carrots and celery with Spicy Red Humus.

  1. Happy Friday, JL! This week I’ve been making different creations and feasting on yummy flaxseed crackers/flatbread. Sandwiches, mini pizza snacks, etc. My recent batch of sprouts (alfalfa & buckwheat) were ready for harvest, they starred in salads, smoothies, sandwiches and even went for a solo performance with a yummy homemade dressing! As for your Blogger session proposal … that alone has given me the extra push I need to attend the conference! I LOVE it! Hoping to attend and finally meet up with my blogger twin (another JL) 🙂 Enjoy your time in Atlanta and safe travels.

    1. Happy Friday! Oh, you should definitely come to BlogHer. It will be my first and I cannot wait! I’m also going to Vida Vegan Con — the vegan blog conference — at the end of August. A fun month for vegan bloggers!

  2. Great idea for BlogHer! I’ve been toying with the idea of going, but getting the time off might be an issue for me.

    True on yoga, my half training and work schedules have been too intense for classes. I have a 30-day yoga gift card I got for Christmas that I won’t start using until after the half!

    The dressing looks wonderful, I need to try that one next! I’ve been having lots of smoothies and salads this week, not too exciting. But I did try and loved Gena’s Balsamic Tahini dressing.

    Nope, 30-something, but I would support a topic like that because it’s another important perspective in the blogosphere.

    If you’re still in Atlanta you might want to try the Cafe Sunflower. I think they have two locations last time I was there.

  6. I am not going to BlogHer, but I would totally sign up for that session. I’m turning 41 this year. I also have read around your blog a bit – love the gray hair and I really liked the “It’s January and I bought bigger clothes”. I have the same tendency to try to diet back to my “happy weight” every two years or so. Late last summer injury put an end to my 1/2 marathon/ triathlon days too, which doesn’t help. But if it’s THAT hard to get there, should I be there? I am still within the healthy weight range for my height.

      1. I’m just dabbling now…swimming, biking, walking, yoga, and P90X. I think I have exercise ADD.
