Vegan Chili "Burger"

‘Twas the day after Christmas and there was a blizzard…

…so I decided to get creative with leftovers.

But before I did that, I took advantage of the “You Waited Long Enough But Not Too Long Sale!”

Yep, I registered for VidaVeganCon. I even booked my airfare and hotel (I have the coolest roomie, ever, Sweet On!). I’m incredibly excited to meet, and learn from, so many great vegan bloggers and writers.

Back to food.  I merged two leftover dishes to form a Chili “Burger.”  I took one piece of leftover Veggie “Meat” Loaf and smothered it in leftover Red Lentil Thai Chili

and added diced avocado and red onion

for a perfect bun-less Chili “Burger.”
