After a long day of work, on an oh-so-cold day, I wanted a hot and hearty meal. NOW!
Here’s what I did.
- I grabbed a sweet potato, washed it and tossed it in the microwave for 4 minutes.
- I grabbed some (pre-washed) collard greens and sliced into strips. I heated toasted sesame oil in a small skillet, added three (yes THREE) cloves of garlic to the oil and then tossed the collards into the skillet. I stirred and then added a dash of onion powder and cayenne pepper. I covered and simmered for two minutes, added almond slices and covered for one more minute.
- I took 1/4 cup of cooked lentils (made in the rice cooker, naturally), added chopped red onion and two quick squirts of Bragg’s Liquid Aminos and microwaved for two minutes.
- I poured the lentils over the sweet potato, added half a diced avocado, a dollop of vegan sour cream and a dash of black pepper.
Dinner was served…
…and it was delicious!
