VIDEO: Pressure cooker tofu scramble!

I’m gearing up for a weekend traveling east! Sunday I will be doing a cooking demonstration (with a Fagor pressure cooker and Massel beef-style vegan broth!) at the Niagara VegFest, as well as a little MC action in the afternoon:

This will be my second appearance at the Niagara VegFest and I can’t wait! The organizers are amazing, the crowd is huge and the welcome is warm.

Needless to say, I’ve been running around this week. I’m catching up from my time away at Vida Vegan Con while preparing for this trip. So, naturally, I decided bulk cooking breakfast would make my mornings easier.

Yesterday I took my iPad into the kitchen, opened up the Periscope app (follow me, I’m @jlgoesvegan), and made two videos while preparing a quick pressure cooker tofu scramble. I’m sharing them with you here today so that you can see how easy it really is to make this vegan staple in the pressure cooker (and to answer some of your questions about using an electric pressure cooker). I didn’t measure much but I’ll give you a run down of the ingredients below.

INGREDIENTS

  • Extra virgin olive oil
  • Onion
  • Garlic
  • 1 block of extra-firm tofu (frozen, thawed, pressed, crumbled)
  • Chopped baby bella mushrooms
  • 1 potato, diced
  • 1 apple, diced
  • Cherry tomatoes
  • Dill
  • Turmeric
  • Cumin
  • Nutritional yeast
  • Chicken-style vegan broth (by Massel)

HOW?

Watch the video! (But basically saute add, ingredients, cover and cook on high pressure for 4 minutes. Use a quick release. Easy peasy! (If you want an actual recipe, you can also check out this variation of the recipe: Italian Tofu Scramble (-ish) in the Pressure Cooker.)

With just two of us in the house, this made enough for leftovers. Guess what I’m having for breakfast today?

  1. JL, I like your new floors! I had a keen eye on them before you said they were new (in the newest video) because I’m in the process of selecting some for my house. Yours look warm and yet not too dark that they’d show the Kitty hair. I have 3 myself, not by choice but nevertheless, here they are. (Not sure whether to put a smiley face or frown there but oh well, I love ’em. ) I noticed you didn’t take yours into the kitchen which is what I’m trying to decide – the man told me about a luxury vinyl that apparently looks just like tile. Trust me your counters are much prettier than my vomit yellow ones. I guess I can say vomit if you can show….. well, you know. 🙂 I was interested that your hubby teaches master swimming too as my nephew also does that in Austin, TX.

    1. Hi Betsy! We went a very basic vinyl from Home Depot in the kitchen and wood laminate in the living room and dining room. We suspect we’ll be renovating the kitchen in about five years so we didn’t want to make a big investment in the floors. We like them!

      Dave went to a master’s swimming program in Austin when we were there last week, at the one on campus!
