I’m not much of a tempeh fan but Christy’s recipe has converted me.
The marinade is a blend of sweet and savory ingredients that made my house smell divine as it baked!
The tempeh was delicious hot out of the oven and I imagine it would be equally delicious cold and crumbled over a salad.
True lazy cook confession: That cauliflower?
I hate cutting cauliflower. So I just washed the whole head, drizzled avocado oil over it, added sea salt and a few pinches of curry and roasted it for 35 minutes at 300 F degrees. The whole head. When it came out of the oven I just pulled off the pieces I wanted to eat. Lazy but awesome!

JL — LOVE the roasting method! So easy and convenient. I never thought it would cook through to the inside, but glad to hear you had solid results from a low oven temp.
Right?! Now, if you like mushy cauliflower, this method isn’t for you, but if you like your veggies to have a crunch (I do!) then it’s a great alternative!
