Speaking of pressure cooking, today I’m doing a vegan holiday dinner cooking demo for a corporate client. Last week they said they wanted to see me use a pressure cooker so yesterday I tested out one of my Fagor’s on my induction cooktop.
Success! I’m making a simple holiday plate of nutty quinoa with cranberries, mashed potatoes with white bean gravy, and simple sautéed garlic greens. It should be fun (and yummy)!

I love using an induction cooktop with my Fagor. Absolutely the most easily controlled method of cooking.
How high does your induction cooktop go, @ed9d5be446dbb446034ef7d991a18f53:disqus (temperature?) Mind goes to 525 and it took awhile to come to pressure. Once up to pressure timing was right but I opted for a camp stove with a flame for a demo today because I wanted to show how quickly pressure cooking is.
