A couple of notes before the news:
Yesterday I hosted the Colorado Springs Vegan & Vegetarian Group‘s Vegan Thanksgiving Potluck. Nearly 60 people brought all kinds of delicious food! A big thank you to Field Roast for sponsoring this event. I prepared six roasts in only 37 minutes, thanks to three hard-working pressure cookers (I cooked them on low pressure for 8 minutes and then use a quick release).
We had a vegan roast, raffle too! Oh, and when I learned that some colleagues at my coworking space were collecting turkeys for the local food pantry, I popped two vegan roasts in the cooler so that they could help vegans and vegetarians in need, as well.
Tomorrow on Easy Vegan: ‘Tis the season for gift-giving and delicious food! Stephanie Boyd of The Compassionate Closet joins me to share her tips on holiday shopping for the vegans in your life (and will offer suggestions for what to do with the non-vegan gifts you may receive). Lorena Jakubczak, owner of, Azteca Gourmet in Colorado Springs, will share her tips on making sweet and savory vegan tamales (Thanksgiving tamales, anyone?).
Listen at 12 pm MST Monday via KCMJ.org (or on the FREE TuneIn app).

Your quick roasts situation makes me want a pressure cooker more than everrrrr! Thank you so much for including my recipes, and have a lovely holiday weekend! <3
YOU would love a pressure cooker, @beckystriepe:disqus! What are you waiting for? 🙂 Happy holiday week to you, too! <3
Is there one you like most?
@beckystriepe:disqus, if you want a traditional stove top pressure cooker, you can’t go wrong with the Fagor brand. If a straight-up electric pressure cooker, I like Cuisinart. But I’d remiss not to recommend a multicooker. One device with the following cooking methods: pressure cooking, rice cooking, slow cooking + yogurt maker. I use both the Fagor LUX and the Instant Pot DUO and highly recommend both!
Oh man, that multicooker sounds awesome. We strongly dislike our current rice cooker, so replacing it with something that does lots of things would be great! Planting these seeds with Dave RIGHT NOW.
