I woke up simply euphoric this morning. Last night my Beyond Meatless Monday class launched in Colorado Springs.
The classroom was filled with people eager to learn more about eating a plant-based diet. I had so much fun and I’m pretty sure they did, too! I can’t wait for the second session tonight. (There are just a few spots left in my April class – register soon!)

As you know, I write monthly for the Thought for Food column on Our Hen House. Every other month Ginny and I team up for a post in which Ginny writes about vegan nutrition and activism and I offer a health-supportive recipe – just as we do in our forthcoming book Vegan for Her!
