This time of year I’m doing lots of cooking demos about the wonders of using a pressure cooker to make delicious vegan holiday meals…fast! One thing that amazes folks (and me!) is how succulent a vegan holiday roast is with just a few minutes under pressure…

…and how fab it is to make a holiday roast and root veggies in one-pot (Field Roast, Gardein, and Tofurky make tasty holiday roasts). Here’s the recipe!
Holiday Roast with Mashed Vegetables
Ingredients
- 1 to 2 teaspoons extra-virgin olive oil
- 4 cloves garlic minced
- 1 cup 160 g diced yellow onion
- 2 cups 260 g diced carrot
- 2 cups 220 g diced potato
- 1 teaspoon sea salt
- 1 vegan stuffed roast 1 pound, or 454 g, thawed
- 3/4 to 1 cup 180 to 235 ml vegetable broth
- 1 tablespoon 15 ml almond milk
- 1/4 teaspoon ground black pepper
- 1 teaspoon vegan butter optional
Instructions

In an uncovered pressure cooker, heat the oil on medium-high. Add the garlic and onion and sauté for 1 minute. Add the carrots, potatoes, and salt. Mix well. Place the thawed roast on top of the vegetables and pour the vegetable broth over the roast.

Cover and bring to pressure. Cook at low pressure for 8 minutes. Use a quick release.

Remove the lid, remove the roast, and set aside.

Add the almond milk, black pepper, and vegan butter to the vegetables in the pressure cooker and mash with a potato masher. Slice the roast and serve with the mashed vegetables.
Recipe Notes
If you’re using a multifunction electric pressure cooker, you can also use the slow-cooking function for 1 hour.

HOW AMAZING IS THIS? super quick holiday dinner? love. we may be traveling on the actual holidays this year, so a fun alternative day might be in order… or just a weeknight after work, ha!

OMG! I made this tonight! I will never go back to baking my Tofurky again! Ours was frozen. We followed the directions on the box for defrosting (15 min). Then put it in the InstantPot for 8 min on a bed of potatoes and onions with liquid. BAM! Done! We put a bit of liquid smoke in the broth, sprinkled it with poultry seasoning and smoked paprika. The potatoes were so flavorful mashed with the broth and a splash of almond milk.
Tofurky should put this method of cooking on the box, website, or at least a link to this page! I’m sold.

Yum! What an easy way to put a meal together. I used Field Roast’s Celebration Roast. The IP method made it come out moist but I wanted a little crunch so I put it in the air fryer at 300 for 5 minutes. The mashed veggies were so flavorful and soaked up a bit of the roast drippings. I served this all with corn on the cob and green beans. Perfect! I love simple but tasty recipes like this.

Bailey, was the roast still moist inside after you air fryed it? It sounds AMAZING.
Yep! The roast has so much moisture already that 5 minutes just slightly browned it.
Yay! My stove isn’t working, and now that I know I can make the roast that’s been sitting in my freezer waiting on the repairs, I may forget about it forever! Thank you so much.
